I agree with the posts already here and add: In addition to cutting the salt way back, inject the breasts with a little bit of EVOO (lots of small injections)just before you cook. Those super-chemical injections the turkey companies put in do more to dry the bird out than moisten it, I think. The EVOO doesn't impact the flavor at all and keep nice moisture in.
