Oakridge BBQ has a fantastic venison rub. You have to order it online so that won't help you this weekend, but if you cook venison much I'd highly recommend it. I'm cutting a couple of backstraps into filets on Sunday and using that rub. I'll grill those over hot coals to medium rare. I think I would inject those roasts if you are going to smoke them. I do chuck roasts with Willingham's Beef Injection and then rub with Willingham's Cajun Hot rub. If you like a little heat, that might work good on the venison roasts.
