Interesting. One of the things I'm looking at is the ratio of salt to black pepper. Some recipes show about two parts salt to every one part pepper, but others vary considerably, showing more pepper than salt, like the recipe you posted. On a pork butt, I use a heavy dose of pepper, but I also use a heavy dose of salt. Guess there probably is no majority opinion on this question, just as there is no majority opinion on most other things about barbecue.
