Agreed...the last (24 pound) turkey I cooked I took to 163 before I pulled it and the temp climbed to at least 167...I think the large mass of the bird contributed to a temp rise higher than I wanted, so next time I cook a large 24 pounder, instead of pulling the turkey at 163, I will pull the turk at 161 so the finished internal temp is just a bit lower.
