Head to Texas! There's LSBS, IBCA, Gulf Coast, probably one or two more. All close to the same rules No certified judges, no garnish, uniformity of presentation (it's checked for conformity at turn in). It's all about meat done the bbq way -- 1/2 chicken, pork spare ribs and brisket cut pencil thick. Raffle tickets on the boxes for blind judging. No score sheets, your number gets call for final table or you place. Oh, and an hour or more between turn ins.
