At best you might be adding a small layer of flavor to your ribs. Other than that you are losing heat having the door open and more importantly you are spraying a cool liquid (probably room temperature) on you hot ribs that are in a 250 degree cooking enviornment thus cooling them down and significantly adding to your cooking time....
