I find that 2 hours is too long for me, especially if you are over 225. I go about 1.5 hours tops.
In comps, I spray with AJ diluted with water, but, I do it when I have to go into the cooker for other reasons - check, add or take out other meats. While I have to go in, I'll spray. I keep the bottle near the cooker and/or in the sun to keep it above outdoor temp.
