FYI, did a test cook, cut the 20# in half, cooked at 350-375 for three hours,flipping them every hour. Pulled it off at 145, rested 15 min. Temp went up to 155. Nice pink center,great bark, sliced just fine. 190 would be closer to pulling temp.IMO
