I'm going to leave mine untouched in the fridge and let'em wet-age until about the 21st or 22nd, then prep'em. Based on past experience, they'll be fine. I would not dry age them...they're not a big roast with expendable trimmable edges...there's not much of them to begin with so as to have excess to lose. JMHO. Good Q'en On Ya'. John
