Lee I cook on the WSM quite often . For fuel , I like a mix of lump and briquetts 50/50 with very little wood,if any.
I've used all the water pan methods and I think just foil in the pan works best.
Initially it's easy to over shoot you target temp and hard to get it back down. So be carefull there. Very nice cookers.
