i don't prefer the re heated ones. we use frozen meatballs also for the initial run (after thawing) but reheating really turns them dry. the bacon just isn't the same the second time either. we did a bunch (300)for an event recently. glad i didn't do them all the first day. now you are really confused. why not give it a test run and see how it works for you. its your rep on the line. if initial prep and cook were more time consuming then maybe but just to easy to do them initially. risk / reward leans in favor of doing on site.
