You've got a valid reason to vent. A judge stating anything like "it wasn't traditional" is not acceptable. The question is "was it legal under KCBS rules?" If it is a legal cut of meat then it HAS to be judged on it's merits as presented.
As for the sauce comment, it'd have to take a large chip on ones shoulder to think you know what's "traditional" when it comes to sauce. If it compliments the meat it scores well, if it doesn't, it doesn't score well.
As for retraining, I don't know if it's possible to retrain that out of a judge once it's ingrained into their behavior but I could be wrong.
It's like trying to retrain someone to like liver when they really don't imo.
As for each teams entries hitting different tables on each turn in, it's my understanding that's exactly what's supposed to happen.
