Here are three Carolina style sauces that I always serve when I cook for a party. Interestingly, the Piedmont sauce seems to be the most popular. The Eastern Carolina style is my personal favorite.

Eastern Carolina Vinegar Sauce
1 cup white vinegar
1 cup cider vinegar
1 tablespoon sugar
1 tablespoon crushed red pepper flakes
1 tablespoon Tabasco sauce
Kosher salt and freshly cracked black pepper to taste.
Preparation: Combine all ingredients, let “steep” for a week or so, then use. This recipe may taste a bit rough when freshly made, but if you make it a few weeks ahead of time, it smoothes out and tastes really good. If it’s still too rough for your palate, thin with a little water or apple juice…but, if you do this, it won’t be strictly authentic.

Lexington Sauce
1-1/2 cups cider vinegar
1/2 cup ketchup
1/2 teaspoon cayenne or hot red pepper flakes
1 tablespoon sugar
1 teaspoons Kosher salt
Preparation: Combine all ingredients in a pan, bring to boil, stir thoroughly to dissolve sugar. Reduce heat and simmer for 10 minutes. Cool and bottle.

Piedmont Sauce
1 quart cider vinegar
12 oz Sweet Baby Ray's or K.C. Masterpiece BBQ Sauce
1/3 cup packed brown sugar
1 T red pepper flakes
2 T Kosher salt
1 tsp black pepper
1 tsp celery seed
2 T Worcestershire sauce
Juice of one lemon
1 T chipotle powder
1 tsp dry mustard
1 T onion powder

Mix all ingredients in a pot, bring to a boil, then simmer for 10-15 minutes. Let cool, and bottle. Great with Carolina style pulled pork BBQ sands.
