I didn't cook the meat, but I have helped prep boxes for maybe a dozen judging classes over the years. I would guess that maybe 1/3 - 1/2 of them featured white meat in the chicken boxes. The breasts were bone-in/skin-on, so I had to debone every one of them before they could be sliced and placed in their boxes. All the classes were in the mid-Atlantic area on the East Coast. FWIW.
