Jon, one of the local lockers here makes a really good dried venison. Just like dried beef. I was wondering if you had any suggestions on how to make something like this. I have never tried. I am more of a process than recipe guy, so any tips would be helpful. Thanks
BTW, I use a 8 cubic feet chest freezer with an external control on it to keep the temp for aging beef - and storing extra kegs of home brew...
