Right on! I once asked a cook why he used sauce. His reply was "that,s what the judges want." I told him that was BS. I as you, have talked to many teams about sauce. Most of it is so sweet and cloying, that it completely hides the meat, and a lot of it is not compatible with the meat it is used on.
