Just my thoughts, but I don't think there is anything formal or informal about brisket. The presentation is the thing that is formal or informal, like served a paper plate is informal and served on a nice platter is more formal. Offer/serve bbq sauce, but place it on the table in a nice bowl/server.

Do it this way, or else cook prime rib.
