I've been walking a thin line for several years now. I started burning sticks, switched to pellets and now cooking with both. While much talk has been around about which is best, I've decided they are tools best used for which they work best. Sometimes I feel guilty walking back into contest camp wearing clean clothes, smoke washed away, well rested while the stick burner around me are trying to drag out of a sleeping bag after tending fire all night.
Tonight in Utah it is freezing and foggy but tomorrow I'm feeding 100 hungry state troopers and their wives so cook I must. As I'm loading up my FEC100 with briskets and butts, my Lang 60 sits sleeping with a layer of frozen fog giving it a nice Christmasy look, I know that a warm bed waits for me. Tomorrow at noon I'll fire up the Lang for ribs and chicken and that will be fun.
