Tumbled in the vacuum tumbler last nite and into the pit today rubbed with pepper, coriander, garlic and some bbq rub. Brine in tumbler was a 20% pump (did not take it all) with 70%H2o, 15%beer, and 15%maple syrup, and a Tablespoon or so of ground pickling spice. Cut a chunk off last nite for the pressure cooker for a text and got a belly ache I ate so much. The cut I used is eye of round. More pics later when done. Smoking with hickory and cherry.
