Smoked to 140, which was plenty of smoke and then into covered foil pan to simmer/steam til it hit 190-195. Sliced off some for a sample sandwich and now turned off the pit and will let rest in there til bedtime and cool in the garage. Very much liked it. I'll have to whack off a piece for the son in law across the street. First time using this cut for corned beef/pastrami, like it a lot, VERY little waste.
