Grilled boudain is wonderful - grilling creates a crispy skin with a moist interior. However, you have to grill them on the top rack - preferably with some ribs or chicken cooking below them for added flavor. I have impressed many a Cajun with my grilled Boudain and Red Beans and Rice.
