Thermostats could be off but are probably on the money. Just past the end of the convection plate the temp will definitely drop off. From my experience the temp is quite high near the firebox then slowly tapers off. Just past the plate it really drops off. Learn to use all temp zones to your advantage and you'll be a happy camper.
The temp probes are probably right. No need to pay for new ones. Just try testing their temps in boiling water to see if they are on the money or not.
