Good afternoon friends, tomorrow I am cooking on my upright smoker a whole standing rib roast and need a little advice. My plan is to sear it at 450 degrees for about 15 minutes and drop the temp to 275 to finish off. What I do not really know is how long it might take to get to 120 degrees in the center. I'm not sure what time to start. I would love to tap into your experience and knowledge on this. If you have a better way, throw it at me.
