I've done the Thomas Keller Blowtorch Prime Rib Roast several times. The recipe calls for using a kitchen torch to brown the outside of the roast and rubbing with salt and pepper before placing in the oven at 275F. I like the head start the torch gives the roast towards forming a nice crust. The accompanying simple horseradish sauce is a nice side as well.
