Found out that you can light up a WSM into a full-blown blow torch on a hot/fast cook. Keep the temp down, that is what Cathy says. Don't try to cook the briskets in 5 hours. Fortunately, nothing got trashed, happened during the wrap, learning curve. But a good cooker, great overall outcome on all. Merry Christmas.
