The rule isn't really clear as to what you can do after meat inspection but IMO if you trim a butt to below 5 pounds it's illegal. Other than that anything goes as long as it stays in one piece.

As for why, well it's one of those things that the judges have come to expect and if you don't include some sliced money muscle you run the risk of a sub par score because of it.

In my old school opinion it's really kind of ridiculous.
