I use an offset charcoal smoker, have oak, apple, cherry, hickory wood at my disposal to use...I typically use Butcher BBQ rub have the spicy and the honey versions, or keep basic with S&P? Any suggestions for marinade, types of wood from above, temperature to use would be most appreciated. Also if there are any different cuts, would order from my local butcher so totally open for suggestions...
