They lend well to long, slow braising so I would get some smoke on them and then into a pan and braise with some onions and such. Peel and slice before serving covered with the onions and sauce, could be a bbq sauce base too. Sliced and pickled with onions are also VERY good. Takes me back 40 years ago when every old fasioned butcher shop had pickled tongue and onions for sandwiches on a nice chewy hard roll, Mmmmmmm
