I have a 7# whole turkey breast free range nothing added, that I will smoke on New Years. I am injecting it with Italian dressing tomorrow and using my WSM with apple wood for smoke. I need help with how much of the dressing should I inject? Should I add butter? Should I put rub under the skin also? What should I put on the skin? Sorry for the length but it is our delayed Christmas and this thing wasn't cheap, and the kids expect dad to come through. Happy New Year to all.
