Id inject with some creole butter. Lots of flavor and you dont get that over salty flavoring. Google 'Scottie's Creole Butter'. Or if you have any of drbbq's first 10 bbq cook books, i think it's in there... ;) it was created with stuff that most folks have in their spice cabinets.
