Dave, I have a rack I put in a pan and lay the brisket on the rack. The rack holds the brisket up off the bottom of the pan, such that it is not down in the drippings. As for pans, I've used disposable pans and I've used a shallow sided, non-disposable pan. I think the smoke fills the smoke chamber, all around the brisket, and that it doesn't matter if the pan has high sides or not. Just my two cents.
