That makes sense. I just took one out of cambro and it was still in juice and bark was not set.. I think your method is good.
I still need to drain juices before the rest I guess.... and crack open or remove the foil in order to keep the bark. I'm cooking on an Fec 100 so I think I need to be careful to preserve what smoke and bark I'm creating with my limited experience on the FEC.
