I too cook on a fec 100 have for about 8 years . but i dont cook in a pan i cook it flat down till it hits 170 then i wrap mine at 170 and put it flat side up and pull it at 198 and put it in the cambro to rest i make sure i put flat side up because i have found that if i dont i loose the bark from the juices but the other way some of the juices seem to soak back it to the brisket. i have not cooked them in a pan but i might try the rack in the bottem of a pan next time.Good Luck
