Not necessarily. A lot of it depends on how long either have been aged. In general, a Sam's angus brisket is not worth cooking for a comp right out of the display case. Needs a few weeks of aging. Any aging shortens the cook. An aged angus will cook more quickly than a non-aged Wagyu.
