dont cook like a brisket, We remove most of the fat cap but leave little bits, they get nice and crispy. We use our rub witch is basically salt garlic and pepper. mix 1/4 of rub with 1/4 cup of water and 1/4 of olive oil and a tablespoon of white wine vinager. this will turn into a liquidy paste let the tri tip sit in that for 2-3 hours. Then do a reverse sear, smoke at 250 until an internal temp of 120 then move to a high heat grill sear it off until temp hits 130-135 then let rest for 10 min and cut thin against the grain. treat this like a steak and buy a high quility peice of meat
