The answers you received gave you some good information. I would only add one thing: It's risky to cook something the first time when guests are coming. I would try to cook one in advance as a test run; doesn't take long to cook one. I would also repeat what one person said about getting a choice grade because anything less can come out as tough as shoe leather even if not over-cooked and sliced thinly against the grain.
