I read a lot of different boards and watch a lot of YouTube, I like to cook and have a good group of friends. I had a Gastric Band put on almost 7 years ago so I can't eat a lot of meat like BBQ. (No Room) so I work on the flavor and cooking and have friends over to eat. They will be honest since they know I'm not cooking to impress.

The worst thing a person can say to someone who's trying to to learn to compete is give the pat compliment of "That the Best I have ever Ate!" Even if it was, it can mislead.

I've been reading this board since around 97-98 I thought the "Scrutchfield" Brisket method was the greatest ever! then I learned that that was considered overcooked and fall off the bone was a DAL in KCBS.

So I read and read and read........
