Cooking for my birthday, budgeting

Hi All...having 75 people over for my birthday, BBQ themed, 60 adults and 15 under 10. Making brisket, pulled pork, pork loin, chicken and possibly ribs with sides of corn muffins, home made baked beans, coleslaw, potato salad and bread. Budgeting 2x 20lb pork shoulders, 2-3x Briskets, 8x Whole Chickens, 2-4x Pork Loins and ??? Side Ribs...toying with the side rib idea but they are on sale this week for $1.58/lb so now really thinking about it...any ideas where I am over/under budgeting? Don't want to be wasteful and over do it but would rather than running out. Also how many racks of side ribs would I get? 2 Rib Bones each? Have everything else bought already. Thanks
