Pork butt (Sam's) 1.89 per pound. 50% loss in cooking ***equals*** $3.78 per 16 0z. cooked product. Wedding crowd size serving ***equals*** 5oz ***equals*** $1.26 per. With bun (.15) BBQ sauce (.10) you are into that sandwich about $1.50. Not sure what your fuel is, my pellet smoker runs about .50 an hour ($7.00 for 14 hours). I sell these all the time for $5.00 ($6.00 w/ slaw). Not counting fuel or tax I clear $3.50 per sandwich or about 70% profit. Since the smoker doesn't know if I'm cooking one or 16 butts, the more cooked the higher the profit margin.
Point is don't sell your self short. I have attended weddings that the food provider charged $20.00 a plate for chicken wings. Just because you like to "Q", don't be taken advantage of.
