Heat control

I have been experimenting with differnent heat control methods. I was hoping others have som esuggestions.
I'm using a horizontal smoker. When my coals get closer to the meat I cover them with a small pan 8x8 or smaller. This disperses the heat outwards without extinguishing the coals.
Does anyone use a different method?
