Actually the bare bone backribs are from leaving most of it on the Ribeye, so they can really charge for it. If you ever buy a whole ribeye and the back side of it has what we call large fingers running down it. You know the guy at the rib table is doing his job trimming. Also I agree, the short rib plate is the way to go if you want a nice meaty beef rib.
