You might try contacting a Tyson rep. We were introduced to a new Tyson beef rib product just two weeks ago. Seems they are "gluing" part of a roast to the rib so there is about two inches of meat on the back side of the rib. We smoked them up and tried them. We're not fans of beef ribs so we won't be serving them in our restaurant.
