I just looked at Weather Network and forecast for Quebec City is -7C° with plenty of sun, not much different than my scenario in London, ON. Why is that too cold? Why not start on the charcoal grill and get 'real' smoke flavour into the meat and then finish in the oven if you have to? Trying to get a good balance of smoke flavour without the acrid over-power of liquid smoke is hard in the oven process. I do like the apple cider marinade idea; apple and pork pair terrifically.
