Being a huge Sushi fan this sounds interesting. I'd try reducing the Cheerwine and then add some wasabi and garlic then sweeten (if needed) to taste to make the dipping sauce.
I think if you take the pulled Pork,Cucumber,Carrot and maybe a bit of Avocado (of course rice) and do kind of a California roll with it it'd be good.
I'd also try Brisket,Pickle,Cilantro and maybe a thin slice of red Bell Pepper with either a mustard dipping sauce or a sauce like this:
3 -4 teaspoons white vinegar
1 teaspoon balsamic vinegar
teaspoon tamarind pulp
cup honey
1 pinch powdered saffron
cup chopped cashews
2⁄3; cup fresh cilantro
2 garlic cloves
2 green onions
1 tablespoon granulated sugar
1 teaspoon ground black pepper
1 teaspoon ground cumin
cup olive oil

I would also try brown rice as well as white, two distinct flavors with brown rice becoming more popular as of late.
