Ray you are so right, pasta the way you describe it with a little ham is delicious. If you are interested in pursuing Italian food further take a look at Marcella Hazan's books. She introduced real Italian cooking to the US in the 70's I think and every one of her books is good. Her recipes are perfect and I never change anything as she would kill me if she knew I did so even though I don't know her! Her first book has an Italian vegetable grill with eggplant, peppers, onions, zuchini, etc that is a great side to any grilled meat. There was also a discussion on the forum here lately about porchetta, don't have the link to that but I linked something below. I think Rob from Fattyque (sorry wrong spelling)posted about this.
