I don't use water so I just take two pieces of heavy duty foil and multi fold/crease them together and line the pan. (This first layer stays in for many, many cooks.) I then place a large clay planter base plate in the pan and put another 2 piece layer of foil over the top. This is the throw away, mess catcher, layer. Been doing it this way along time. Do the same thing in my 18 incher.
