An experienced sushi chef taught me how to prepare salmon for sushi, sashimi, and cooking. The marinade is a simple blend of water, sugar, rice vinegar, and soy sauce. If the marinated salmon is cooked a teriyaki or orange/butter reduction glaze is applied before serving.
And cedar planks really enhance cooked salmon.
