I take it you are doing traditional uramaki I have included a few other roll types below.

uramaki(roll with rice on outside) or Futomaki (seaweed wrap):

Braise pork belly in a cheerwine reduction
Roll with cucumber, and spinach leaves

Pulled pork, apple cooked firm in cheerwine - sliced 1/4 inch strips, cream cheese slices

Dynamite roll - reduce cheerwine with a little wasabi and vinegar - roll - cream cheese slices, avocado, melon slices, belly or pulled pork.
Drizzle reduction over sushi after cutting the roll

Nigiri (meat on top of a ball of rice):

Braise pork belly in a cheerwine reduction
set over a formed wedge of sushi rice

Money Muscle glazed with a cheerwine reduction
set over a formed wedge of sushi rice

apple cooked firm in cheerwine - sliced 1/4 inch strips
cream cheese strips
scallion
Braise pork belly in a cheerwine reduction

Prosciutto
cream cheese strips
scallion
