a friend of mine has a chance to get some fresh slaughtered beef cuts from someone he knows who has a farm that slaughters occasionally for personal use. Would he have to age it in any way or would he be good to go? He doesn't have any way to do real commercial type wet/dry aging except in regular home fridge. any other helpful hints to pass along?
