Yellow is more "onioney" white is milder, Vidalia is sweeter, red is a little milder than yellow, but not as mild as white.
Each has it's own place, but generally, they can be interchanged without ruining whatever you are using them.
Red looks great when raw, not so good cooked. Other little variations.
